Ice wine, a type of dessert wine, is produced from specially treated grapes. These grapes have been frozen while they were still on the vine. The water in the grapes will freeze, but not the sugars and other dissolved substances. As a result, the grapes will be more concentrated.
Ice wine production requires a large labor force to pick the grapes when frost comes and freeze the crops. As a result, ice wine production is relative quite expensive.
Ice wine production is limited to a minority of areas in the world because it needs regular cold temperatures in wine-growing regions. CAnada and Germany are the worlds top ice wine producers. Approximately 75 percent of Canadian ice wines come from Ontario.
